Vegan Pistachio Nice Cream

Sometimes you just need a little something to satisfy your sweet tooth. This pistachio nice cream is just the perfect thing! It is sweet, creamy, cold and simply delicious. The pistachios are blended together with the milk which infuses the entire dessert with that wonderful pistachio flavor.
What Is Nice Cream
“Nice Cream” is a name typically used to differentiate a vegan, banana based ice cream type treat from regular dairy ice cream. Though you will need to plan ahead to allow for freezing time, this treat comes together fast as everything is just thrown into the blender.
What Is In Vegan Pistachio Nice Cream?
Bananas
I have a stock pile of overripe, peeled, and frozen bananas in my freezer for all of the nice creams I love to make. Bananas add an all natural sweetness to this dessert without giving it a banana flavor.
Coconut Milk
You will need the canned coconut milk to give this dessert its creamy consistency. I keep a can of coconut milk in my fridge for when I feel like making desserts. The coconut fat solidifies and keeps everything cold when blending up ingredients. It also adds depth of flavor and you can’t even taste coconut!
Almond Extract
This is what gives traditional pistachio desserts its trademark flavor. You can omit it, but it will not have the pistachio flavor your may have come to know and love.
Matcha Powder
Ok ok…I know this ingredient does not really add anything as far as flavor goes, but I just HAD to put something in here that is technically a green leafy packed with antioxidant power. I love sprinkling it into smoothies, so why not ice cream?
Maple Syrup and Dates
So we do need a bit of sweetness added…after all this is dessert! Why add refined sugar when you can use natural maple syrup and dates? NOTE: The sweetness tends to lessen once the dessert is frozen. I thought this was the perfect amount. Feel free to add a bit more maple syrup if you like!
Vegan Pistachio Nice Cream
Equipment
- high speed blender
- loaf pan
Ingredients
- ¾ cup salted shelled pistachios plus more for garnish
- 1 can coconut milk
- 3 frozen bananas
- 1 tbsp matcha powder
- 1½ tbsp maple syrup
- 4 pitted dates soaked in water
- ¾ tsp almond extract
Instructions
- Place pistachios and coconut milk in a high speed blender and blend until smooth; about 2-3 minutes.
- Add remaining ingredients and blend 2-3 minutes more or until smooth and creamy.
- pour the mixture into a loaf pan and cover with tin foil. Freeze for at least 3 hours or overnight.
- Serve immediately after scooping. Add crushed pistachios for extra texture and garnish. Enjoy!
