Roasted Crispy Chickpeas
These roasted crispy chickpeas are one of my favorite salad toppers and an easy way to incorporate more protein into your diet. You can easily make these oil free by eliminating the drying part. After chickpeas are drained and rinsed, simply coat wet chickpeas with seasonings and place in the oven. Easy chickpeasy!
Chickpeas Are Better Than Croutons
If you are making this snack and placing them in your soups and salads, then you are doing your body a favor! Store bought croutons contain SO many additives and harmful ingredients. They are usually loaded with butters and seed oils, and contain little to no nutritional value.
Roasted crispy chickpeas add flavor and crunch and add 3 extra grams of protein and fiber to your already nutrient rich plant based meals. I love to add them to my Greek Goodness Salad as an added boost of nutrition and flavor.
Great As A Crunchy Baked Snack!
I love to eat these crispy treats as a delicious savory snack when I’m craving just a little something before a meal. I pop a handful or two into my mouth as I’m cooking all the time! Kids love them too! Store them in an airtight container and keep for up to 5 days.
Roasting Tips
These chickpeas will definitely roast up crispier with the addition of oil. If you are not all oils for your health goals, I would suggest adding either olive oil or avocado oil rather than any harmful over processed seed oils like vegetable or canola.
If roasting without oil, I often crack open the oven during the last 5-10 minutes of cook time. This allows some of the steam to release. With the drier heat inside the oven, the chickpeas can crisp up more easily. Let me know how yours turn out!
Roasted Crispy Chickpeas
Equipment
- large bowl
- towels for drying
- spoon
Ingredients
- 2 cans chickpeas (garbanzo beans) drained and rinsed
- 2 tsp spices of choice salt, pepper, paprika, garlic powder, *Chef Paul's Salmon Seasong
Instructions
- Rinse and drain 2 cans of chickpeas and place them on some towels to dry. Pat off any excess liquid and remove any loose outer covering pieces.
- Place chickpeas in a large bowl and gently stir in 2 tbs olive oil.
- Gently stir in spices.
- On a parchment lined baking sheet, spread chickpeas out in a single layer and cook in the oven at 425° for about 25 min or until they look a crispy brown color.
- *Optional. You may wish to lightly season the chickpeas immediately after they come out of the oven. This really gets the seasonings to "stick" and keep the flavor. Taste before you do this.
