Plant-Based Spring Roll In A Bowl
Cooked cabbage, carrots, celery and an array of Asian inspired spices and herbs are dished up with a savory Veggie Ground to make this Plant-Based Spring Roll In A Bowl. I love to dish this up over some warm organic brown rice and serve with some air fried wonton crisps.
This recipe is not only fast and delicious, it is budget friendly as well. Here are some of the main ingredients:
Cabbage, Carrots, Celery, and Onions: These veggies 🥕 make up the bulk of the bowl. You can be sure you are getting your dose of fiber, vitamin A, vitamin C, and many anti inflammatory antioxidants. Plus, the cabbage is a cruciferous vegetable which means that it has some anti-cancer benefits as well.
Spices and Seasonings: I use a dash of Five Spice Powder to add some nice flavor to this dish. I also use seasoned rice wine vinegar, garlic, ginger paste, white pepper, soy sauce, and a touch of maple syrup to add a touch of sweet.
Veggie Ground: Instead of meat, we swapped for my delicious Veggie Ground Beef. You won’t miss the meat at all by using this savory tofu/carrot combo. BONUS: You can make this ahead of time and just dump it in at the end for a quick weeknight meal. This veggie ground is loaded with plant based protein!
Air Fried Wonton Crisps: We needed a little crunch so I went ahead and cut some wonton wrappers into triangles and sprayed them with a touch of avocado oil. Then I sprinkled them with my favorite seasoning,Chef Paul’s Magic Salmon Seasoning and air fried them at 375 for 7 minutes with a little shake in between. These were the perfect compliment!
Time Saving Tips
If you are making this Plant-Based Spring Roll In A Bowl, then I would suggest that you prep the Veggie Ground Beef ahead of time. I like to make a double batch of this at the beginning of the week because it is so versatile and can be used in place of ground beef in any recipe.
You could also shred and chop your veggies ahead of time too. Shred the cabbage, carrots, and celery and seal them in an airtight container for a few days or hours prior to cooking. You could also use frozen onion to save on chopping time. Every little bit of prep helps when looking to maintain health and vitality.
One more thing you could do is if you have meat eaters in your family, brown up 1/2 pound of ground turkey in 1 Tbsp soy sauce and 1/2 teaspoon ginger paste until no pink remains. Set that aside and when you finish cooking the cabbage mixture, separate it into halves. Stir in the ground turkey with one half, and the veggie ground with the other. A win, win, for the whole family!
Plant-Based Spring Roll In A Bowl
Ingredients
- 5 cups green cabbage shredded (about 1 medium head)
- 1 cup shredded carrots
- 1 cup celery shredded or sliced thin
- 1 cup yellow onion diced
- 6 green onions sliced
- 1 Tbsp sesame oil
- 3 garlic cloves crushed
- 1 teaspoon ginger paste
- 2 Tbsp soy sauce
- 2 teaspoons seasoned rice wine vinegar
- ¼ cup vegetable broth
- ¼ teaspoon Chinese Five Spice Powder
- ½ teaspoon salt
- ¼ teaspoon white pepper
- 1 Tbsp maple syrup
- 2 cups veggie-ground-beef recipe*
Instructions
- Prepare the Veggie Ground Beef recipe first and refrigerate for later.
- In a large pan, sauté yellow onions, carrots, and celery in sesame oil for 5 minutes or until softened. Add garlic and cook for another minute.
- Add the ginger paste, salt, pepper, and five spice powder and cook for another 30 seconds.
- Slowly add the veggie broth, soy sauce, and rice wine vinegar, and maple syrup scraping up any bits off the pan as you add them.
- Add the shredded green cabbage and stir to mixture together.
- Cover and simmer over medium low for 10 minutes or until the cabbage is tender.
- Add in the Veggie Ground and heat through.
- Stir in green onions before serving.
- Serve over organic brown rice with air-fried won ton crisps.
For The Air-Fried Wonton Crisps
- Cut desired amount of wonton wrappers into triangles.
- Spray bottom of air fryer basket with avocado oil.
- Place wonton triangles into basket being sure not to overcrowd. You can do this in batches if you need to.
- Spray wonton triangles with another spritz of avocado oil and sprinkle with seasoning.
- Air fry at 375 for 5 minutes.
- Shake your basket and spritz again with oil if needed.
- Air fry for another 2 minutes or until desired crispiness is achieved.
- Sprinkle with more seasoning if needed and serve.
Notes
- Add an additional 80 calories per serving for the veggie ground beef.
