Healthy Veggie Quesadillas
These Healthy Veggie Quesadillas are so quick and easy! They will brighten up any meal with their tasty satisfying flavor. I use a burrito sized version of these Siete Almond Flour Tortillas. They are gluten free and made with only a few all natural ingredients. They are pretty tasty too!
I also use about a cup of these Fire Roasted Vegetables.
Here in the U.S. you can find them at Costco. You could really use and frozen vegetable medley you like! You could also chop up some fresh veggies of choice and sautée those.
Next I sprinkle on some vegan cheese. I only use a little and just to get some of that gooey goodness you get from traditional quesadillas. It does have some sodium and coconut oil in the ingredient list, but is otherwise all natural. These taste wonderful without it so if you are on dietary orders to omit salt or oil, you can go without.
Last, I add about a half of a cup of my Perfect Vegan Cheese Sauce. It adds so much creamy flavor to these and helps make it easily one of my favorite quick meals!
Why Not Just Use Full Dairy Cheese?
You certainly can use full dairy cheese in this recipe if that suits you. However, studies have shown a relationship between dairy consumption and a host of health problems. Many dairy farming practices also mean that hormones are being passed along from mother cow to milk. I feel that we as Americans on a standard American diet, consume WAY too much cheese. I certainly have in my lifetime. I will enjoy full dairy cheese from time to time as a “treat”. But unless I know where my cheese is coming from and how it is brought to my table, I will, for the most part, pass. Plus, I don’t need dairy to get my calcium and other nutrients. I can get all I need from plants!
Healthy Veggie Quesadillas
Ingredients
- 1 burrito sized tortilla
- 1 cup frozen vegetables
- ½ cup perfect-vegan-cheese-sauce
- ¼ cup vegan cheese shredded
Instructions
- In a large pan, dry fry the frozen vegetables until soft. About 6 minutes. Remove and set aside.
- In the same pan, warm/cook your tortilla about 10-15 seconds on each side.
- Add the veggies to one end of the tortilla.
- Sprinkle half of the cheese over the vegetables.
- Sprinkle with remaining cheese.
- Fold tortilla in half and then in half again. Flip to warm on the other side, about 30 seconds.
- Serve with some mixed greens, salsa, and/or mashed avocado.
