Easy Overnight Oats
When I first transitioned to a more plant based diet I will admit, I felt a little like I was missing out on some of my favorite flavors. This was because my taste buds were not yet adjusted to eating a cleaner, non- standard American diet. But boy, did I ever look forward to having my easy overnight oats each morning! They were somehow super healthy but tasted like they could have been loaded with bad stuff. They would also keep me full all morning long.
I choose organic oats because then they are likely not sprayed with harmful glyphosate which is a chemical sprayed on oats and other grains that is harmful to the gut could potentially be linked to cancer. I purchase them at our local Costco but you can also get them here:
Can I Make Other Easy Overnight Oat Flavors?
Of course! I used cinnamon and bananas in this recipe, but here are a few more fruit options you could try. Use the same base, but instead of bananas, stir in:
Chopped fresh mango and shredded coconut
Peanut butter and chocolate chip
Fresh blueberry, strawberry, raspberry, cherry, or you can use frozen if refrigerating overnight.
Diced apples with 1/4 teaspoon cinnamon or apple pie spice.
Raisins with walnuts.
Canned pumpkin and 1/4 teaspoon pumpkin pie spice.
A scoop of protein powder
You can really put in whatever amount of fruit and add ins you feel you would like to the base. The possibilities are endless!
How Do They Cook?
They don’t need to. By soaking them in the plant milk, you are allowing them to soften. They soften perfectly overnight. I love to make several jars of these at the beginning of the week, and then they are a quick grab and go breakfast! If you aren’t as prepared, (as I am not always) you can make them before you head to work and then pop them in the refrigerator for an hour or so before enjoying. It still softens up nicely. I like to make them before my workout and then I have an effortless delicious breakfast to reward me when I am finished. 🙂

Easy Overnight Oats
Ingredients
Oat Base
- ½ cup organic oats
- 1 Tbsp maple syrup
- 1 Tbsp Chia seeds
- ¼ teaspoon cinnamon
- ½ cup plant milk of choice
Fruit Addition
- 1 small banana or ½ large
- ½ cup fresh blueberries
Instructions
- Add all ingredients except blueberries to a jar or small bowl.
- Shake vigorously or whisk until combined.
- Refrigerate for 1 hour or overnight.
- Add fresh blueberries before serving. (Optional)
