I Heart Chickpea Chocolate Chip Cookies
When it comes to dessert I have an ok time passing at cake and ice cream. No problemo. But offer me a piece of pie or a cookie and my willpower leaves every time! In the past, I would love making a warm batch of chocolate chip cookies and curling up on the couch with a tall glass of milk.
Now that I am plant based, I still can! These cookies are made with wholesome chickpeas and natural peanut butter and sweetened with maple syrup and vegan chocolate chips. I can curl up on my couch with a warm cookie and a nice glass of almond milk. Same feel, less calories. No animal product…just healthy. Can we say WIN?!

Oh and may I mention that this makes the absolute BEST egg free cookie dough?? Just make a batch and place in your refrigerator for 30 minutes to chill. So good!
You can also top a baked cookie with some vanilla “nice cream”, add another cookie on top and you have an awesome cookie sandwich.

Chickpea Chocolate Chip Cookies
Equipment
- high speed blender
- spatula
- cookie scoop
- baking sheet
Ingredients
- 2 cups chickpeas (1 15.5 oz can rinsed and drained)
- Scant ¾ cup peanut butter or tahini
- ½ cup pure maple syrup
- 3 teaspoons vanilla extract
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup vegan chocolate chips
Instructions
- Preheat oven to 375℉
- Place all ingredients except chocolate chips in a high speed blender and blend until smooth.
- Stir in chocolate chips.
- Use a medium cookie scoop to make 12 rounded cookies on a parchment lined cookie sheet. Use small cookie scoop to make 24 small rounded cookies.
- Use the bottom of a glass to slightly flatten each cookie about halfway through cooking time.
- Bake at 375℉ for 20-25 minutes. Allow to cool completely before serving.
