My husband has quite the sweet tooth. As with many of us, he would love to have ice cream every single night. I am more of a cookies and pie type of sweet tooth, but make no mistake about it. It would be hard to pass up a nice bowl of cherry ice cream!
When I was first going plant based, nice cream came to the rescue. I could whip up a batch in 5 minutes flat. Throw in whatever flavor you want and it is instant gratification. I also LOVE my Vegan Pistachio Nice Cream. It is a slightly more indulgent version of this super healthy treat. Can I say that again? The best part, it is totally good for you!
How To Make Cherry Nice Cream
Simple! Just take four cups of frozen bananas, (I grab tons of these Frozen Banana bags already done, but you can totally freeze your own) and two cups of frozen cherries. You could use any other frozen fruit here, I like strawberries too. Allow the frozen fruit to soften just a bit (5 minutes) and then blend it up with a teaspoon of almond extract and 1/4 cup +2 Tbsp of almond milk.
Be sure to scrape down the sides as you are blending, and add just a bit more plant milk if the mixture is too thick. Then transfer to a parchment lined loaf pan and pop in the freezer for at least 30 minutes. Done! I love to top mine with some slivered almonds or black walnuts. You could even throw some mini chocolate chips on top if you are feeling like indulging just a bit. So healthy, so easy, so delicious!
Cherry Nice Cream
Equipment
- 1 high speed blender
Ingredients
- 4 cups frozen bananas
- 2 cups frozen cherries (or frozen fruit of choice)
- 1 teaspoon almond extract (use vanilla extract for other fruit)
- ¼ cup + 1 Tbsp almond milk (or plant milk of choice)
Instructions
- Allow frozen bananas and cherries to soften for about 5 minutes after removing from the freezer.
- Add frozen fruit, almond extract, and almond milk to a high speed blender.
- Blend on high until smooth. You will need to stop to scrape down the sides every so often. Add more plant milk if mixture is too thick.
- Transfer to a parchment lined loaf pan and freeze for at least 30 minutes before serving.
- Top with slivered almonds, chopped walnuts, or mini chocolate chips.
- Freeze leftover nice cream for a nice treat another day. Enjoy!
