Cashew Mayo
This creamy cashew mayo is quickly made in the blender and will become a staple in your home as a healthy alternative to traditional mayo. Ditch the gunky oil and preservatives from store bought mayo and opt for some fresh plant based ingredients to dress up your next salad, wrap or sandwich. Here is a short list of the healthy ingredients:
1 Cup Raw Cashews:
This adds a healthy fat component without using oil. Cashews are packaged with nutrients and protein while oil has nothing to offer but empty fat calories. Soak your cashews overnight or boil them for 5 minutes until they are softened. Then use a high speed blender to blend them with the other ingredients for a super smooth and creamy texture.
1/4 Teaspoon Dijon Mustard and 2 Teaspoons Lemon Juice:
These ingredients add the acidity to the mayo. Vinegar is used in traditional mayo and you could sub for distilled white vinegar or better yet, apple cider vinegar, however I like the flavor the dijon mustard adds. I have at times added an extra teaspoon of ACV to this recipe just to give it a bit more zip.
1/2 Teaspoon Nutritional Yeast and 1/4 Teaspoon Salt:
The nutritional yeast gives tones down the acidity just perfectly giving a nice flavor addition while the salt perfectly heightens the flavor of all the ingredients together. This is my go to brand of NUTRITIONAL YEAST. But I also use THIS ONE as well.
2-6 Tablespoons Water:
This amount can vary. Start with 2 Tbs of water in the blender to get things started. Stop the blender and scrape down the sides. Then add some more and blend until you get a creamy “spreadable” consistency.
A Plant-Based Staple
This cashew mayo recipe is a plant based staple. If you are new to plant- based eating try it out. If you are a plant-based novice, you probably have a batch in your fridge at all times. Spread it on bread for veggie sandwiches or use it in soups and stews to thicken and flavor them. Use it in wraps and salads as the creamy base. Cashew Mayo
Equipment
- 1 high speed blender
Ingredients
- 1 cup raw cashews (soaked)
- ½ teaspoon dijon mustard
- 2 teaspoons lemon juice
- ½ teaspoon nutritional yeast
- ¼ teaspoon salt
- 2-6 Tbsp water
Instructions
- Starting with 2-3 Tbsp of water, place all ingredients into a high speed blender and blend on high for about two minutes.
- Scrape down the sides and add more water if necessary. (You want a smooth creamy consistency.)
- Continue blending another minute or until smooth.
