Boost Up With A Berry Kale Salad!
It’s been a slew of cold grey days and I am in need of some colorful mouthwatering food to brighten them up! This Berry Kale Salad is perfect for perking up your energy and mood, plus the abundance of vitamin c will help to boost your tired hair, skin, and nails during these cold, dry months.
Superfood Nutrient Dense
This salad is packed with nutrition. Did I mention that I added some extra crunch by tossing in some crisp Romaine lettuce? Most people don’t give Romaine the respect it deserves. I mean how can you thrive off of lettuce?? (Sarcasm) :). Just one cup of this leafy vegetable contains minerals, such as calcium, phosphorous, magnesium, and potassium. It’s naturally low in sodium. Plus, romaine lettuce is packed with vitamin k and folate. Don’t forget that it contains the immune boosting vitamin c as well! I didn’t add it in to the title of this recipe, but it does deserve a round of applause.
Berries and Vitamin C
I loaded this salad with berries, apples, and lemon to give you a complete boost of vitamin c. Vitamin C is necessary for the growth, development and repair of all body tissues. It’s involved in many internal functions, including the absorption of iron and the proper functioning of the immune system. It aids in wound healing, and the maintenance of bones, and teeth. It also gives you a healthy plant dose of collagen.
Kale
I can’t say enough about kale! Containing 3 grams of protein and a great amount of Omega-3s, this cancer fighting leafy green is packed with vitamin K to help ward off osteoporosis and heart disease. Kale is loaded with tons of other vitamins and minerals and is considered to be one of the most nutrient dense foods on the planet.
Oil Free Dressing
Can’t stand the texture and taste of kale? Trust me, once you add this zesty oil free dressing and let it soak in and soften those tough leaves, you will not feel like eating it is a challenge in the least! The berries add so much sweetness and the dressing balances it all out with its more savory flavor thanks to that blend of shallots and balsamic vinegar. Your body will thank you for not weighing it down with unnecessary oil and your will finish your bowl feeling light, airy and completely satisfied!
Berry Kale Salad
Ingredients
For The Salad
- 4 cups kale, chopped, stems removed
- 4 cups chopped romaine lettuce
- ¼ cup diced shallot
- 1 whole medium apple chopped
- 1 cup fresh blueberries
- 1 cup chopped strawberries
- ¾ cup chopped walnuts
- drizzle of balsamic fig glaze*
For the Dressing
- ¼ cup chopped shallots
- 2-3 tbsp lemon juiced or one whole lemon juiced
- ½ cup any white bean aquafaba*
- ½ tsp white pepper
- 2 tbsp raspberry balsamic vinaigrette
Instructions
For the salad
- Chop kale and romaine into bite sized pieces.
- Add shallots, apple, blueberries, strawberries, and walnuts and toss to mix well.
- Pour dressing over and toss to mix well again.
- Finish with a drizzle of balsamic fig glaze.
For the dressing
- Combine all ingredients in a blender and blend until smooth, about 2 min.
