Apple Squash Salad
Bits of crisp apples, roasted squash, and cranberries give this apple squash salad its bountiful flavor. Drizzle on some no-oil Maple Mustard Dressing and you’ll FALL in love!
Good For You Fuel
This apple squash salad is loaded with goodies. The greens alone provide vitamin C, vitamin K, and folate. They are a good source of beta carotene, which converts into vitamin A in the body. This is super important for your immune system. The apples have their skin left on which makes them high in quercetin and they are packed with vitamin C. I love the crunch and sweetness they offer here as well.

I like to add a tiny bit of horseradish to give it just a bit if zip without being spicy. You can omit this if you wish as the dressing is still delicious without it. I even like to make a double or triple batch for salads later on in the week!

Apple Squash Salad
Ingredients
For The Salad
- 8 Cups chopped romaine lettuce or salad mixture of choice
- 1 cup chopped honey crisp apple
- 1 cup chopped Granny Smith apple
- 1 cup roasted or steamed butternut squash
- ½ cup dried cranberries
- ½ cup pepitas
- ½ cup pecans
- 1 cup vegan smoked cheddar cheese (optional)
For The Honey Maple Dressing
- ¼ cup dijon mustard
- 2 Tbsp pure maple syrup
- ¼ teaspoon garlic powder
- ¼-½ teaspoon horseradish
Instructions
- Place salad greens in a large bowl.
- Evenly chop 1 medium honey crisp apple (or red apple of choice). You should yield about 1 cup.
- Chop a medium Granny Smith apple. You should yield about 1 cup.
- Add 1 cup roasted or steamed butternut squash.
- Sprinkle on pepitas, cranberries, and pecans.
- Chop about 1 cup of vegan smoked cheddar cheese. (Optional) I like Violife brand.
- Drizzle on some maple mustard dressing and enjoy!
