Researchers have speculated that certain extracts from oyster mushrooms can boost your immunity. They also have antiviral and antibacterial effects. They are loaded with healthy vitamins and minerals and can support your gut health by increasing the production of beneficial short-chain fatty acids. Mushrooms please!
Why My Family And I Love This Recipe
My family and I absolutely loved this recipe. The batter is seasoned like fried chicken and the air fryer does a pretty good job of crisping them up beautifully! I use a spritz of “better for you” oil like avocado or olive oil to lightly coat them and make them extra crispy. You can however omit this and they are still completely delicious!
The dipping sauce is one of my go-to’s. It is so easy to whip up! Just combine some plant based mayo with a little sriracha sauce. Then run your knife through some jarred capers and slip those in for just the right amount of tang. Pair this with these mushrooms and watch them all disappear!
Air Fried Oyster Mushrooms
Equipment
- Air Fryer
Ingredients
- 9oz oyster mushrooms
Vegan Buttermilk
- 1½ cup soy or almond milk
- 1 tbsp apple cider vinegar
For The Coating
- ½ cup organic cornstarch or tapioca starch
- ¾ cup organic whole wheat flour
- 1 teaspoon marjoram
- 1 teaspoon rosemary
- 1 teaspoon parsley
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ¾ teaspoon sage
- ¾ teaspoon thyme
- ½ teaspoon nutmeg
- ½ teaspoon celery salt
- ½ teaspoon salt
- ½ teaspoon black pepper
- spray avocado oil
For The Dipping Sauce
- ½ cup vegan mayo
- 1 teaspoon sriracha sauce
- 1 Tbsp chopped capers
Instructions
- Dust off mushrooms. Do not wet them. Cut and separate into large flat pieces. I save the stems to air fry at the end.
- Soak mushrooms in vegan buttermilk for 15 minutes. Drain, but reserve the milk in a separate bowl.
- To make the flour mixture stir together whole wheat flour with marjoram, rosemary, parsley, garlic powder, onion powder, sage, thyme, nutmeg, celery salt, salt, and pepper.
- Dip mushrooms in buttermilk. Then coat with the starch. Dip back into the buttermilk and then dredge in flour mixture. Set on a plate until all pieces are coated.
- Preheat air fryer to 400°F for 5 minutes.
- Spray basket of air fryer and place a batch of mushrooms along the bottom without overlapping. Spray oil (optional) over mushrooms and air fry at 380° for 10 minutes.
- Flip mushrooms over, spray again (optional) and air fry at 380°F for another 6-8 minutes.
- Place on cooling rack as second batch cooks. Serve with sriracha mayo sauce.
