Agave Lime Slaw
Cilantro, lime juice, and agave nectar add a punch of flavor to the fresh cabbage and veggies in this ultra healthy Agave Lime Slaw. Dress up your salads and tacos in the best way!
I made this little coleslaw while making some fish tacos for dinner. Since I wasn’t having the fish, I needed something a little more substantial to add to my taco which at the start consisted of a corn tortilla and some refried pinto beans.
I began looking around for things I had on hand. In the refrigerator I found a few odds and ends that sounded good together. I cut up some jalapeño, red pepper, and green onions and mixed those with some red and green cabbage from a coleslaw salad bag I had. To that I added a can of crushed pineapple, a can of rinsed and drained black beans, some agave nectar, and some freshly squeezed lime juice. This delicious coleslaw was finished off with a dash of salt and pepper. I was VERY happy with the results!
Needless to say, this was a huge hit with the fish tacos. I added it on top of my refried bean corn tortilla and drizzled it with some of my delicious POBLANO CREMA. Last I added just a bit of my favorite salsa. These were seriously some of my favorite tacos. Ever.

Agave Lime Slaw
Ingredients
- 3 cups red and green cabbage mixture
- 1 cup chopped romane lettuce
- ¼ cup cilantro
- ¼ cup chopped green onion
- 2 Tbsp diced red pepper
- 2 Tbsp diced jalapeño
- 1 15oz can black beans-rinsed and drained
- 1-2 limes juiced (about 3-4 Tbsp)
- 1 Tbsp agave nectar (or honey if not vegan)
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
- Stir all ingredients together in a medium bowl. Enjoy!
